Park Hyatt Sydney is celebrating its 22 years of operation in a dreamy location with a spectacular rebuilt residence. Leading the re-opening of Park Hyatt Sydney’s food and beverage offerings is executive chef Andrew McKee, from country Australia. Andrew’s inspiration is sourced from his youth where he helped collect home grown herbs and fruits from his grandmother’s garden.
Located in a luxurious environment bathed in natural light, The Dining Room at Park Hyatt Sydney allows its views of Sydney Harbour, Circular Quay and the Opera House to do the talking. New contemporary interiors are a striking contrast to the blue of the harbour, creating a relaxed-yet-refined atmosphere suited to lingering lunches, key business meetings and romantic dinners.
According to McKee, “We love to get involved on a producer level and listen to what the farmers, fishermen and artisans are telling us is good, and interpreting it for our guests. We adapt to the produce when it’s at its best and where it’s best sourced, from visiting Rangers Valley where a selection of our premium beef come from to Gunnedah’s Demeter Farm where we source organic whole grains.”
The Living Room, features all day dining, and serves High Tea, coffee and drinks throughout the day. Finally The Bar offers a range of small dishes, fine wines and specialist malts and whiskies.
Park Hyatt Sydney’s general manager, Andrew Mensforth stated, “Park Hyatt Sydney has changed the restaurant offering from harbour kitchen and bar to The Dining room, in line with our new residential styling and direction. Our executive chef, an Australian born and trained chef, presents the freshest local produce in line with the indoor-outdoor offering at the hotel. We look forward to showcasing our exceptional cuisine to our ever discerning local and international guests”
